i can't believe it's been almost two years since i've made elotes. there was a sale on corn the other day, so i figured i'd buy some. i also managed to get my hands on some cotija cheese!


mexican grilled corn; corn, colby jack cheese, cotija cheese, mayonnaise, lemon, butter, tomatoes, garlic, ground hot chili, salt, pepper.

i started off by grating some colby jack cheese-- colorful and delicious.


and my current favorite is cotija cheese. the more cheese, the better! ♥


then i diced some tomatoes for color.


to speed things up, i boiled the corn before grilling. i also brushed on butter, yum!


after a few minutes, it was good to go.


i threw on the other ingredients and seasoned this baby until it exploded with flavors. i'll definitely need to make this a few more time before the summer ends.
