last week, we baked these tasty cupcakes for a couple of parties. i was surprised at how easy it was to make. plus, it called for common baking ingredients. we just had to pick up carrots from the market.

carrot cake cupcakes; 3 cups grated carrots, 2 cups white sugar, 2 cups flour, 1¼ cup oil, 4 eggs, 2 teaspoons baking soda, 2 teaspoons baking powder, 2 teaspoons cinnamon, 2 teaspoons vanilla extract, ½ teaspoon salt.


one of my friends gave me some colorful eggs-- so pretty!


first, we cracked the eggs over the white sugar.



then added the oil and vanilla extract. ohh, doesn't that just look lovely?


then it was time to let this empire red beauty do its job.


when it finished mixing, we sifted in the rest of the ingredients.



then another quick spin with the stand mixer.


afterward, we added in a few cups of grated carrots,


and threw it in the over at 350° F for about twenty minutes until it was ready.


cream cheese frosting; 8 oz. cream cheese, 1 stick butter, 3¾ cups confectioners' sugar, ½ teaspoon vanilla extract, ⅛ teaspoon salt.


my favorite frosting recipe is sprinkle's cream cheese frosting. mix the cream cheese, butter, and salt until smooth and creamy. add in the confectioners' sugar and mix until incorporated. add in the vanilla extract and give it one last spin. it should have the consistency of ice cream.



and there you have it! delicious, sugary happiness. ♥
