over the years, my sister has made all sorts of delicious crepes! and before now, i've never helped her in the kitchen with crepes. i figured it was about time to learn how to make these savory little pancakes so i asked her for her recipe (and it didn't look too difficult).
fruit crepes; 4 eggs, 2 tablespoons salted butter melted, 1⅓ cup milk, 1 cup flour, 2 tablespoons sugar, strawberries, blackberries, blueberries, bananas. this batter made about a dozen small crepes.
first, mix all the non-filling ingredients together until the batter has a smooth, watery consistency. if making fruit crepes, you can skip the sugar since the fruits are naturally sweet enough.
then put some of your favorite fruits over low heat.
after that, it's almost like making pancakes. just remember that crepe skin are thinner.
when the fruits have become nice and soft, then it's ready to go!
make sure both sides are fully cooked,
and then fill away! i put the fruits on the uglier side so that it wouldn't show after i wrapped it. and then more fruit on top of the finished crepes. not too bad for my first attempt.
