
cilantro lime dressing; 1 jalapeno pepper, 1 clove garlic, ¾ teaspoon minced fresh ginger root, ¼ cup lime juice, 2 teaspoons honey, 2 teaspoons balsamic vinegar, ½ teaspoon salt, ¼ cup packed cilantro leaves, ½ cup extra-virgin olive oil.

place the jalapeno pepper, garlic clove, and ginger into a blender and pulse until finely chopped. in my first attempt, i put too much ginger-- a little really goes a long way.

pour in the lime juice, honey, balsamic vinegar, salt, and cilantro leaves and pulse until blended. i took the advice of many reviewers and cut down on the honey (originally ⅓ cup honey).

that's all there is to it! the dressing came out a lovely shade of green and the flavors had a nice punch. i liked the taste because it was a lot more vibrant than the store bought dressings i'm used to.

i tried to use it all up because the dressing didn't keep the next day. good news is that it works on just about anything-- even grilled food!
