the last few days have been pretty heavy so i promised a friend that i would bake white chocolate macadamia nut cookies. however, i have no idea what possessed me to do such a thing because i've never made this before and my baking skills are limited at best. thankfully, my sister is an adept baker and saved me from making a mess and all kinds of other trouble.

white chocolate macadamia nut cookies; 1 cup butter, ¾ cup brown sugar, ½ cup white sugar, 2 eggs, ½ teaspoon vanilla extract, ½ teaspoon almond extract, 2½ cups flour, 1 teaspoon baking soda, ½ teaspoon salt, 1 cup chopped macadamia nuts, 1 cup white chocolate chips.


in a large bowl, add the brown sugar, white sugar, butter and mix until smooth.


beat in the eggs, one at a time. pour in the vanilla and almond extract.


combine the flour, baking soda, and salt.


gradually mix it with the ingredients in the large bowl until it looks ready.


mix in the chopped macadamia nuts and white chocolate chips. i actually used less than a cup of each because i didn't want to overwhelm the cookies.


bake for ten minutes at 350° F and it's done! it actually turned out very good.
