it's been a high strung week, but thankful for the encouragement from the Word and friends. i thought it would be relaxing to try out a new macaroni & cheese recipe for dinner. the last time i made it, it was from a box. after work, i picked up a few ingredients from the local store and got to work in the kitchen.


turkey macaroni & cheese; macaroni, ground turkey, 2 eggs, 2½ cups cheese (monterey jack cheese, cheddar cheese, mexican style four cheese blend), 4 tablespoons butter, 3 cups milk, ½ onion, 1 tablespoon flour, chili powder, garlic powder, crushed red pepper, pepper.

i started with the sauce because i knew it would take me a while to follow a recipe. let the butter melt in a saucepan and then added the flour. after that, i poured in milk and stirred it until the sauce thickened.


i also whisked some eggs and added it to the sauce. then i removed it from heat.


i threw in a slew of cheeses and mixed it until well incorporated.


it actually didn't take very long as the cheese melted quickly.


i forgot to buy fresh garlic and pepper, so i used substitutes. normally i would add salt, but i used salted butter and didn't feel the need to overload.


while i was making the sauce, i also made the macaroni and ground turkey. i cooked the macaroni a little under because it would cook some more in the oven.


then i mixed everything together-- added more cheese on top and a bit of sautéed onions.


twenty minutes in the oven at 350° and it's done. not the world's best mac and cheese, but good enough. the recipe is simple enough, but it felt hectic when i was cooking in the kitchen.
